Winter Green Soup

The green color of this side-dish soup comes from pureed frozen spinach and mint, with potatoes, onion, chicken broth and milk added, plus mayonnaise and a little soy sauce and curry powder.
 

Ingredients

  • 4 tablespoons butter
  • 2 large onions, chopped
  • 2 medium baking potatoes, cubed
  • 1 14 1/2-ounce can reduced-sodium chicken broth
  • 1 bay leaf
  • 1 teaspoon salt (or to taste)
  • 1 10-ounce package frozen chopped spinach
  • 1/2 cup chopped mint leaves + sprigs for garnish
  • 2 teaspoons soy sauce
  • 1/2 teaspoon curry powder
  • 2 tablespoons mayonnaise
  • 2 cups milk
  • 1/2 cup sliced green onion tops

Method

In large saucepan melt butter; saute onions until golden and tender-crisp. Add potatoes, broth, bay leaf and salt. Cover and simmer until potatoes are tender. Remove bay leaf. Add frozen spinach. Simmer until spinach is just thawed. Stir in chopped mint, soy sauce and curry powder. Transfer to blender or food processor and process until smooth. Add mayonnaise and process until smooth. Return to saucepan; add milk and green onion tops. Reheat to serving temperature; taste for seasoning, and ladle into soup bowls. Garnish with mint sprig.

 

Notes: In winter we want something warm and nourishing in the way of soups. But after many gray days, we also need something colorful and beautiful to stimulate our taste buds--like this soup! Our luscious soup has unusual additions--the mayonnaise gives a touch of piquancy as well as smoothness, and the soy sauce and curry powder are so subtle as to be almost not noticeable.
