White Chicken Chili a lighter chili alternative

  • Total Time: 35 minutes


2 Tbsp Olive Oil
1 lb Browned Chicken, either boneless, skinless breast or ground chicken
1 Sm Onion Diced
2 Garlic Cloves Minced
1 (14.5 Ounce) Can Chicken Broth, i use fat free
1 (16 Oz) Can Diced Tomatoes, no salt added
1 (7 Ounce) Can Diced Green Chiles
1 (16 Oz) Jar of Salsa Verde
1 (15 Ounce) Can White Beans, can substitute with black beans or bean of choice
½ tsp Dried Oregano
Salt & Pepper, to taste
½ tsp Ground Coriander Seed
¼ tsp Ground Cumin


1. Heat oil, and cook onion and garlic until soft.

2. Stir in broth, salsa verde, tomatoes, chilies, and spices. Bring to a boil, then simmer for 10 minutes.

3. Add chicken, and beans; simmer 5 minutes.

I personally let simmer for an hour or longer

Season with salt and pepper to taste.

4. Serve with these toppings for people to choose from: limes, cilantro, (low fat) cheese, avocado, (low fat)sour cream, and tortilla chips.

If you prefer a thicker sauce add cornstarch or other alternative
