White Chicken and Hominy Chili

Hominy is a tasty mixture of dried white and yellow corn. This thick chili is best served with cilantro and lime wedges.
 

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 tbsp ground cumin
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground cloves
  • 1/2 tsp brown sugar
  • 4 cups chicken or vegetable broth
  • 2 small cans chopped green chiles
  • 2 medium potatoes, peeled and diced
  • 1 large can white hominy, drained and rinsed
  • 2 cups chopped cooked skinless chicken
  • 2 cups cooked white beans
  • Salt and pepper to taste
  • 1 bunch cilantro, washed and chopped
  • 2 limes, cut into wedges
  • Corn chips

Method

In a 4 quart pot, heat olive oil over medium heat then add onion and next 6 ingredients. Cook about 5 minutes, stirring often, until onion is wilting but taking care not to burn garlic. Pour in broth, stirring well to get spices off bottom of pan. Add green chiles and chopped potato then bring to a boil. Reduce heat, cover pot, and simmer half an hour. Add hominy, chicken and beans then cook another 15 minutes. Add salt and pepper to taste. Serve in bowls topped with a handful of cilantro, a couple lime wedges and corn chips on the side.
