West African Fish Soup

Diced yams, haddock, and bell pepper is cooked in water with coconut, lemon juice, olive oil, and black pepper for this ethnic soup.
 

Ingredients

  • 1 lb yams, peeled & diced
  • 2 tbsp lemon juice
  • 1 diced bell pepper
  • 2 tbsp ground parsley
  • 1 1/2 lb. skinless haddock fillets, diced
  • 1 tsp black pepper
  • 4 tbsp olive oil
  • 1/2 cup minced coconut
  • fruit
  • Water (as desired)

Method

Simmer everything in a pot of water for 40 minutes, stirring once in a while.
