West African Fish Soup

Diced yams, haddock, and bell pepper is cooked in water with coconut, lemon juice, olive oil, and black pepper for this ethnic soup.
Ingredients
- 1 lb yams, peeled & diced
- 2 tbsp lemon juice
- 1 diced bell pepper
- 2 tbsp ground parsley
- 1 1/2 lb. skinless haddock fillets, diced
- 1 tsp black pepper
- 4 tbsp olive oil
- 1/2 cup minced coconut
- fruit
- Water (as desired)

Method
Simmer everything in a pot of water for 40 minutes, stirring once in a while.
