We Love Chicken Soup

A pressure cooker makes preparing this soup a very simple task. With all natural ingredients, this soup is healthy and delicious.
Ingredients
- 3-4 boneless chicken breasts
- 6 chicken bouillon cubes or 1 large can chicken broth
- 3/4 large pkg large carrots, peeled and medium dice
- 6-8 yellow golden potatoes, quartered
- 5-6 medium to large celery stalks, cut into medium pieces
- 1-2 tbsp salt, optional
- 1-2 tbsp pepper, optional
- 2 tbsp Italian chicken spice
- 4 tbsp virgin olive oil

Clean and trim chicken breasts, pat dry, and rub with 1 tbsp salt, 1/2 tbsp pepper and all chicken spices. Place oil in a pressure cooker and set heat on medium. When hot, brown all sides of chicken well, skin included. Place loosely in bottom of pressure cooker and place lid on according to cooker instructions. Set pressure relief to 15 lbs. Pressure cooker will begin to hiss in about 10 minutes, but leave cooker alone. Once it starts doing this, it will go to a rattle that will settle after 1-2 minutes. Start timing cooker at this point. Let pressure cook 15 minutes. Turn heat off and let steam escape naturally. Place potatoes and carrots in pot. Add celery and set heat to medium again, making sure regulator is on and set to 10 lbs of pressure. Repeat pressure cooking process starting the timing after pot starts to rattle. Let rattle 10 minutes then turn off heat. Remove lid, add egg noodles, replace lid, and let sit about 15 minutes, stirring once or twice, just until noodles are done.
