Warm Avocado Soup

This creamy avocado soup is fast and easy to make--an elegant starter.
 

Ingredients

  • 2 avocados
  • 2 tsp lemon juice
  • 1/4 tsp salt, or to taste
  • 1/4 tsp paprika, or to taste
  • 2 Tbsp chopped onion
  • 2 cups milk
  • 1 cup cream
  • 1 cup homemade chicken stock
  • Dried chives for garnish

Method

Mash avocados through a sieve and put in top of 2 qt double boiler. Add lemon juice, salt, paprika and onion, mix well. Place pot over simmering water and add milk, cream and chicken broth. Stir well and continue to stir until soup is hot. Serve immediately garnished with a pinch of dried chives.

 

Notes: Serve with a basket of toasted baguette rounds barely brushed (or drizzled) with extra virgin olive oil mixed with paprika. Use vegetable stock for a vegetarian alternative.
