Veggy Bean Soup and Flakens


Homemade bean and vegetable soup--a great way to warm up a cold winter day! Flakens are fried bread dough--a nice compliment to the soup.



Ingredients:

  • 1 bag - Great Northern or Navy dried beans
  • 8 cups of water
  • 4 vegetable boullion
  • 1/2 cup chopped white onion (add more or less if you like)
  • 1/2 cup juilenned carrots
  • Bread dough (frozen or home made)
  • Margarine

Method

Wash beans and sort through to eliminate any rocks or foreign objects. Soak beans in a bowl overnight in water. In the morning, drain, rinse and add beans to a soup pot. Add all remaining ingredients and simmer for at least 6 hrs, stirring occasionally. Scoop out 2-3 cups of soup and puree in a blender. Return pureed soup to the pan--the mixture will now be slightly thicker. Half an hour before serving, roll out bread dough to 1/8" thickness. Cut dough into manageable squares (approx. 2" x 2-4" pieces. Melt 2 Tbsp margarine in frying pan and cook bread dough till golden on each side, flipping once. Salt fried dough lightly. Serve hot bread with the soup.

Notes: I revised this recipe from my mom's family version which used chicken broth and ham hocks. The bread dough was cooked in shortening rather than margarine.
