Union Pacific Chili

Union Pacific Chili


4 lb Lean Beef, coarsely chopped
2 cloves Garlic, minced
8 tsp Chili Powder
8 tsp Flour
4 tsp Salt
2 tsp Cumin, comino
½ cup Beef Suet, optional
¼ lb Butter
2 cups Onions, diced
2 pkg Hot Water
1 pt Tomato Puree
3 cups Cooked Beans


Season the meat with the garlic, chili powder, flour, salt and cumin, working it into the meat. Heat suet and butter in a large heavy kettle and sauté onions until they are soft but not browned. Stir in meat mixture and cook 20 minutes, stirring often. add water and tomato puree. Simmer chili 1 hour, stirring often. Stir in beans and cook 15 minutes more. Adjust seasoning for salt and serve with crackers. Makes 1 1/2 gallons
