Sliced turkey kielbasa (or Polish sausage) is combined with canned white beans, chopped escarole, and chicken broth for this quick soup.
In large soup pot, saute garlic in olive oil. Add kielbasa and saute until browned. Add chopped escarole and cover; cook briefly and stir occasionally until wilted. Add white beans with liquid. Pour in chicken broth; stir. Bring just to a low boil to heat through and blend flavors.
Notes:
Serve with grated Parmesan cheese.
