Turkey Kielbasa and Escarole Soup


Sliced turkey kielbasa (or Polish sausage) is combined with canned white beans, chopped escarole, and chicken broth for this quick soup.



Ingredients:

  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 pound turkey kielbasa, sliced thinly
  • 1 head escarole, rinsed but not drained, and chopped
  • 1, 15 1/2-oz can white beans with their liquid
  • 48 ounces reduced-sodium chicken broth
  • Grated Parmesan cheese

Method

In large soup pot, saute garlic in olive oil. Add kielbasa and saute until browned. Add chopped escarole and cover; cook briefly and stir occasionally until wilted. Add white beans with liquid. Pour in chicken broth; stir. Bring just to a low boil to heat through and blend flavors.

Notes: Serve with grated Parmesan cheese.
