Turkey Chili

This turkey chili combines ground turkey with spicy tomatoes, corn, beans, and salsa. Have lots of sour cream ready to cool it off.
Ingredients
- 1 tsp. olive oil
- 1 small onion, finely chopped
- 1 pound ground turkey
- 1 can (14-oz.) beef broth
- 3 tbsp. chili powder
- 2 tbsp. ground cumin
- 2 tsp. garlic powder
- 1 can (10-oz.) diced tomatoes with jalapeno peppers
- 1 can (14-oz.) whole kernel corn, drained
- 1 can (14 1/2-oz.) diced tomatoes
- 1 can (15-oz.) black beans, rinsed and drained
- 1 cup salsa
- Salt and ground black pepper to taste
- Shredded cheddar cheese, optional
- Chopped green onion, optional

Method
Heat oil in skillet over medium heat. Saute onion and add turkey. Cook turkey until brown. Add beef broth and seasonings. Then add undrained tomatoes with peppers, corn, undrained diced tomatoes, black beans and salsa. Bring to boiling, stirring constantly. Lower to a simmer; simmer covered for 10 minutes, stirring occasionally. When serving turkey chili, top with shredded cheese and green onions, if desired.
