Touchdown Chilli

This chili will be the hit of your party. With enchilada sauce, chiles, black beans and corn, this recipe can't be beaten.
 

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 2 cups chopped white onions
  • 2 cans chopped green chiles, undrained
  • 2 14 oz cans enchilada sauce
  • 2 8 oz cans tomato sauce
  • 2 8 oz cans stewed tomatoes
  • 1 14 oz can black beans
  • 2 14 oz can corn
  • 1 lb browned ground beef
  • Cheese for garnish

Method

In a large saucepan, saute onions in olive oil over medium high heat, until lightly browned then drain. Add chicken broth and bring to a simmer. Transfer onion mixture to a crock pot, add green chiles, enchilada sauce, tomatoes and tomato sauce then cook on low heat. Cover and cook 2 hours. Add beans, corn and beef. Cook on low 2-3 hours. Serve with grated cheese, tortilla chips or cornbread.
