Too-Tired-To-Cook Super Quick Veggi-Chlli Casserole"


This quick main dish has vegetarian chili spooned over quick-cooking rice and sprinkled with shredded cheese. Corn bread batter made from a mix is poured over all and baked.



Ingredients:

  • 1 large container (2 1/2 cups) of your favorite vegetarian chili
  • 1 cup instant rice
  • 1 box corn bread mix
  • 1/2 cup favorite shredded cheese (cheddar or mozzarella)
  • 1 tb honey (optional)

Method

Preheat oven to 350. In a casserole or baking dish, spray a light coat of nonstick spray. Put 1 cup of uncooked rice on bottom of dish. On top of the rice add the chili. Sprinkle cheese over chili; set aside. In mixing bowl, whip up corn bread mix, adding 1 tbsp. Honey, if desired. Pour over chili, cheese and rice. Place in preheated oven for the time directed on the back of the corn bread box, or until done (test if it is done with a toothpick). Serve with crackers on a cold night in front of the TV. or when you get home late.
