Tomato Lentil Stew


You can make this stew as thick as you like by varying the amount of water used. Lentils, tomatoes, and onions flavor this stew.



Ingredients:

  • 2 cups lentils, washed  
  • 5 tomatoes, chopped    
  • 2 large onions, chopped  
  • 3 tbsp. olive oil  
  • Sufficient water for boiling (5 to 6 cups)  
  • 3/4 tsp. salt (or to taste)  

Method

In a very large skillet or pan, saute onions until translucent. Add tomatoes and stir occasionally. Add salt. When tomatoes are fairly stewed, add the lentils and water and boil until tender (30 to 40 minutes).

Notes: Can be served with steamed cauliflower.
