Tomato Bisque

This rich and simple soup combines pureed canned tomatoes with chicken broth, whipping cream & a little butter. Topped with croutons to serve.
Ingredients
- 1 28-oz can Italian-style Diced Tomatoes
- 1 32-oz pkg. chicken broth
- 1 pint whipping cream
- 2 Tbsp butter
- Croutons

Heat chicken broth in a kettle. Meanwhile, put tomatoes in blender or food processor to puree. Add to broth and heat to just boiling. Add whipping cream and heat to simmer. Turn off heat and add butter, stirring to melt. Serve topped with croutons.
Notes: This is so easy and the taste is great! It reminds me of a soup I had once at a Brazilian steakhouse in Dallas. I like to use Caesar croutons with this.
