The Best Vegetable Barley Soup

Interesting flavors come from the herbs de provance and form the lime flavor.
 

Ingredients

  • 1 can low sodium beef broth
  • 2 cans low sodium vegetable broth
  • 28 oz can diced tomatoes with juice
  • 1 Tablespoon Worcestershire sauce
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 long carrots, diced
  • 1 cup frozen white corn
  • 1 cup frozen baby lima beans
  • 1 cup frozen cut green beans
  • 1 Tablespoon Herbs de Provence
  • 2 bay leaves
  • 1 teaspoon celery salt
  • 1/2 teaspoon garlic powder
  • 1 Tablespoon parsley flakes
  • 1/2 cup barley
  • 1 cup chopped green cabbage
  • 1 lime, juiced

Method

In crock pot, pour in broths and diced tomatoes. Add the Worcestershire sauce and stir. Add the diced onion, celery, carrots, corn, lima beans, green beans and stir. Add the Herbs de Provance, bay leaves, celery salt, garlic powder, parsley flakes and salt. Place on high for 2 hours. Add the barley and cabbage and crock on high 1/2 hour more. 3 hours is the total crock time. Salt and fresh cracked pepper to taste. Squeeze lime juice over and stir.

 

Notes: Serve with homemade popovers. This is an easy heart healthy low sodium soup. The Herbs de Provence with a twist of lime makes this a fabulous unique vegetable soup.
