Tex - Mex Corn Chowder


A nice little southwestern chowder with corn, beans, and chicken to sink your teeth into. Very hearty!



Ingredients:

  • 1 can Cream Style Golden Sweet Corn  
  • 1 can Whole Kernel Corn, drained  
  • 1 can Diced Tomatoes with Garlic & Onion
  • 1 can black or red kidney beans, rinsed and drained  
  • 1/2 cup chicken broth  
  • Salt and pepper, to taste  
  • 5 chicken tenders, cut up into bite-size pieces

Method

1. Cook chicken tenders 2. In medium saucepan, combine cream corn, whole kernel corn, undrained tomatoes, beans, broth, chicken and 1/2 cup water. Bring to boil; reduce heat. Simmer, covered for 5 minutes. 3. Ladle into bowls. Sprinkle each serving with shredded cheddar cheese or chopped fresh chili peppers, and garnish with fresh cilantro, if desired.
