This rich potato soup, with plenty of butter and sour cream, is seasoned with chicken bouillon and has parsley and green onion for color.
 

Ingredients

  • 8-10 white potatoes
  • 2 sticks (1 cup) salted butter
  • 4 cups milk
  • 5 green onions, chopped
  • 1 cup chopped parsley
  • 1 chicken bouillon cube, crumbled
  • 1 cup sour cream
  • Salt and pepper, to taste

Method

Boil potatoes, let cool slightly, then peel. Place in a large bowl and mash, leaving some small pieces. Add butter, milk, onions, bouillon, parsley and sour cream; mix well. Cook on low to medium heat until heated through. Serve with warm French bread.
