When making your holiday turkey, instead of stuffing it with traditional bread stuffing, use fresh carrots, celery and onions. After the meal is complete, follow these simple steps to make the best turkey stew you've ever tasted. There is no reason to add any additional seasoning, as the side dishes are already flavored to your liking. With this recipe, you'll never throw another holiday leftover away. Remove any large pieces of meat from turkey and save for use as leftovers in sandwiches, casseroles, etc. What stays on the bone will be used in this stew. Remove carrots, celery and onions from turkey cavity and set aside. Simmer the turkey carcass in a large pot of water until meat falls off bone. Strain to separate broth and carcass. Return broth to pot. Remove meat from bones and add it to broth, discarding bones and skin. Chop carrots, celery, and onion used as stuffing and add to pot. Add any or all of the following leftover side dishes in any amount: gravy, stuffing, potatoes, vegetables (green beans, corn, squash, cabbage, onion, and celery), dried cranberries, and additional turkey meat, if you prefer a heartier dish. Add more water to cover, if necessary. Cook over low or medium heat until flavors blend and all vegetables are tender. If you wish, serve stew over a leftover dinner roll, which doubles as a dumpling. Can be served immediately or frozen.
