Sweet-Sour Sausage and Cabbage Soup

Smoked kielbasa sausage & chopped cabbage are combined with onion & tomatoes in a liquid with brown sugar, wine or vinegar, lemon juice & herbs.
Ingredients
- 2 tablespoons olive oil
- 1/2 lb smoked kielbasa sausage, halved and sliced
- 1 small head cabbage, coarse chop
- 2 medium onions, coarse chop
- 2 cloves garlic, minced
- 1/2 cup red wine or cider vinegar
- 2 tablespoons lemon juice
- 6 tomatoes, seeded and chopped
- 4 cups tomato juice
- 1/4 cup brown sugar
- 2 bay leaves
- 2 teaspoons rosemary
- 2 teaspoons thyme
- 2 teaspoons oregano
- 2 teaspoons basil
- 2 teaspoons red pepper flakes (or to taste)
- Salt to taste, about 1 teaspoon

Method
Saute sausage, onions and garlic in olive oil. Add rest of ingredients; bring to a boil, turn down heat and simmer at least 1 hour.
Notes: This is a not-too-sweet soup. Four cans of diced tomatoes may be substituted for the fresh tomatoes and tomato juice. I think the wine adds zest, but cider vinegar may be substituted.
