Sweet Potato-Leek Soup

Diced sweet potatoes, sliced leek, celery and mushrooms are cooked in chicken broth, with basil and garlic for seasonings.
 

Ingredients

  • 2 T. Butter
  • 1/2 t. crushed garlic
  • 1 large leek (white and light green parts), sliced into thin rings (about 1/2 cup)
  • 2 medium sweet potatoes (peeled and cut in large dice)
  • 1 stalk celery, sliced
  • 1 14 1/2 oz. can chicken broth
  • 1 4 oz. can sliced mushrooms (with their liquid)
  • 1 C. water
  • 1/2 t. chopped basil
  • Fresh parsley for garnish

Method

In a 4-qt. saucepan, saute garlic, leek, and celery in butter over medium heat until opaque. Add diced sweet potatoes, mushrooms with liquid, chicken broth, water, and basil. Bring just to boiling. Lower heat and simmer, covered, until potatoes are done, about 20 minutes. Garnish with chopped parsley.
