Summer Gazpacho


Nothing tastes better--or is healthier for you--than fresh vegetables. This cold soup will hit the spot on a hot day.



Ingredients:

  • 1 clove garlic
  • 1/2 tsp salt
  • 5 ripe tomatoes
  • 1 medium onion
  • 1/4 tsp ground black pepper
  • 1 tsp paprika
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp vegetable oil
  • 1 1/2 cup water
  • 1/4 cup bread crumbs
  • Garnish with any of the following: croutons, chopped cucumber, chopped green, red or yellow pepper, minced chives

Method

Chop garlic and onion. Place garlic, onion, salt, and oil in a blender and pruee. Quarter tomatoes, and working in batches, add tomatoes to blender mixture, and puree until mixture is smooth. Empty soup into a pitcher or large container, add pepper, paprika, water, and vinegar and stir into soup. Refrigerate overnight. Before serving add bread crumbs and stir into mixture. Serve with garnish.
