Steamy Seafood Chowder


Shrimp & imitation crab are combined in this chowder, which also has vegetables, vegetable broth & milk, plus seasonings & turkey bacon for flavor.



Ingredients:

  • 1 lb Turkey Bacon
  • 1 Bunch Green Onions, diced
  • 1 Yellow Onion, diced
  • 2 Cups Diced Carrots
  • 2 Cups Diced Celery
  • 1 Stick (1/2 cup) Butter
  • 6 Cups Vegetable Stock
  • 4 Large Potatoes, diced
  • 6 Cups Milk
  • 1 lb Cooked, Cleaned Shrimp
  • 1 lb Imitation Flaked Crab
  • 2 tsp Old Bay Seasoning
  • 2 tsp Each Salt and Pepper (or to taste)
  • 1 tsp Ground Red Pepper (or to taste)

Method

Cook Bacon, drain and crumble into small pieces; set aside. Melt Butter in stock pot. Cook green onion, yellow onion, carrots and celery in butter about 5 minutes. Pour in vegetable stock and add diced potatoes. Boil gently for 10 minutes. Add milk, shrimp, and flaked crab. Stir in seasonings; simmer until heated through, about 15-20 minutes. Stir in crumbled turkey bacon.

Notes: Serve with some hot crusty bread or in a bread bowl on a cold evening. This is a deliciously different soup.
