Spinach Soup

Cream of celery soup, cream cheese, a stick of butter, & whipping cream add richness to the fresh or frozen spinach and shrimp used in this soup.
Ingredients
- 1 stick butter (1/2 cup)
- 8 oz cream cheese
- 1 cup shredded Asiago cheese
- 1 can condensed cream of celery soup
- 1 1/2 cup heavy whipping cream
- 1 lb fresh spinach, chopped
- (or 1 pkg. frozen chopped spinach, thawed)
- 1 lb raw frozen and devined shrimp
- 1 tsp white pepper (or to taste)
- 1 tsp garlic salt (or to taste)
- Salt to taste

Method
In a large pot melt butter, cream cheese, and Asiago cheese over low heat. When completely melted, add cream of celery soup & heavy cream; whisk until creamy and smooth. Wash and drain fresh spinach. Add spinach to pot and simmer for 5-10 minutes. Next add shrimp, white pepper, garlic salt and continue simmering for 5-10 minutes, until shrimp are done. Finally add salt to taste.
