Spicy Slow Cooker Split Pea Soup

This soup is very low maintenance and delicious. Adding ham or crumbled bacon can really top of this otherwise vegetarian soup.

Ingredients:

  • 2 cups green split peas, sorted and rinsed
  • 2 tbsp olive oil
  • Minced garlic, to taste
  • 2 cups baby Yukon Gold potatoes, cut into quarters but not peeled
  • 2 cups baby carrots, diced
  • 1 large yam or sweet potato, sliced and not peeled
  • 3 tsp ground cinnamon
  • 2 tsp curry powder
  • 2 tsp black pepper
  • 1 tsp dried chili peppers
  • 1/2 tsp cloves

Method

Set slow cooker on high and add peas with 8 cups of hot water, not boiling. Meanwhile, heat olive oil in a saute pan and add potatoes, carrots, and sweet potatoes or yams, along with minced garlic to taste. Saute until crisp tender, about 10 minutes. Add the vegetables to the slow cooker, along with remaining ingredients, and cook at high heat for 2 hours. Reduce heat and cook for additional 4-6 hours.

Notes:

Number of servings: 8-10
