
Healthy and delicious-this vegetarian soup is made with fresh vegetables, garlic and olive oil seasoned with extra spices.
Steam cauliflower and asparagus until tender.
Cut 1/2 head garlic into fine pieces and saute in spicy olive oil until golden brown.
Remove from heat, add steamed cauliflower and asparagus, and stir.
Put all previously cooked ingredients into food processor, add chicken broth, and blend until smooth.
Serve warm.
Notes:
If a thinner textured soup is desired, add additional chicken broth.
Soup can be garnished with steamed asparagus and cauliflower.
