Spicy Chicken Peanut Soup

Peanut butter and hot pepper sauce in a creamy soup base with chicken give this soup a mix of Asian and African flavors.
 

Ingredients

  • 1/4 cup butter
  • 1 cup chopped onion
  • 2 cloves finely minced garlic
  • 1/4 cup finely minced celery
  • 1 Tablespoon flour
  • 1 cup peanut butter
  • 3 (14.5 ounce) cans chicken broth
  • 2 cups diced, cooked chicken
  • 1 teaspoon Asian hot pepper sauce (sriracha)
  • 1 Tablespoon soy sauce
  • 2 cups whipping cream
  • Salt to taste, about 1/4 teaspoon

Method

In a large sauce pan saute onion, garlic and celery in butter over medium to high heat until tender, about 5-7 minutes. Remove from heat; add flour and peanut butter, stirring until melted. Gradually whisk in chicken broth, return to medium heat and bring to a boil for two minutes. Reduce heat and stir in chicken, hot pepper sauce, soy sauce, and continue simmering for 10 minutes. Stir in cream and heat through without boiling.

 

Notes: This soup is a combination of my favorite flavors from Thai, Chinese and African dishes I've tried in various restaurants. I wanted to capture the hot, savory flavors of these styles of cooking in an easy weeknight dish. This is what evolved, and I make it often.
