Spiced French Onion Soup


Caramelized onion slices combine with broth and exotic spices. The mixture is ladled into bowls and topped with provolone-covered toasted French bread.



Ingredients:

  • 5 sweet onions, sliced thin
  • 4 tablespoons (1/4 cup) sugar
  • 3 tablespoons butter
  • 49-oz reduced-sodium chicken broth
  • 6 cups water
  • 4 teaspoons beef bouillon granules
  • 3 teaspoons garlic salt (or to taste)
  • 1 teaspoon ground allspice (or to taste)
  • 2 teaspoons Urban Accents "Moroccan Road" spice (coriander, cumin, cinnamon and mint), available at most grocery stores in the spice aisle.
  • 8 slices French bread, toasted
  • 16 slices provolone cheese

Method

In a large pot, place onions, butter and sugar. Stir together and cook on medium heat until onions are caramelized, stirring frequently. Carefully stir in chicken broth, water, bouillon granules, and seasonings, then bring to a boil. Lower temperature and simmer for a few hours, stirring periodically. Place a toasted piece of bread in an oven-proof bowl. Fill bowl with soup and top with 2 pieces of cheese. Place entire bowl under a broiler to melt and toast the cheese.

Notes: This is a wonderful soup to keep you warm on a cold, winter day.
