Southwestern Black Bean and Chicken Chili

Black beans, chicken, peppers, and tomatoes combine in this spicy chili. Pass sour cream to help cool it down.
 

Ingredients

  • 1 tablespoon corn oil
  • 1 pound boneless skinless chicken thighs, cubed
  • 1 cup yellow onion, diced
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1 tablespoon chipolte chile pepper in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 2 cups fire-roasted tomatoes, cut up
  • 1 15- to 16-oz can black beans, rinsed and drained
  • 2 tablespoons fresh lime juice

Method

In a large skillet, heat oil over medium heat. Add chicken, onion, garlic, and salt. Saute 5 minutes. Stir in chipotle, cumin, tomatoes, and black beans. Bring to boiling; reduce heat. Cover and simmer 10 minutes. Stir in lime juice.

 

Notes: Have plenty of lime wedges and fried corn tortillas to pass around the table.
