Southwest Green Chili Stew

This chili stew uses cubes of pork cooked with green chilies, jalapenos, onion, zucchini, canned corn and stewed tomatoes.
 

Ingredients

  • 3 lbs. lean pork
  • Cooking oil
  • 1 medium onion, chopped
  • 5 roasted (Hatch New Mexico) green chilies
  • 4 jalapeno peppers, seeded and chopped
  • 2 cans stewed tomatoes
  • 2 zucchini, chopped
  • 2 cans whole kernel corn
  • 1 clove garlic
  • Pinch each of pepper & salt

Method

Cut up pork into bite size pieces; cook in some oil until well-browned. Add onion, jalapenos, & green chilies in with meat. Simmer awhile with the lid on. Put in stewed tomatoes, zucchini, corn, garlic, salt and black pepper. Put in enough water just to cover; simmer for 20 minutes.
