Silky Cauliflower Soup with Turkey and Noodles

This blended cauliflower soup uses cooked turkey and noodles. Makes a great after-the-holiday meal.
 

Ingredients

  • 1 16 oz pkg. frozen cauliflower
  • 4 cups chicken broth
  • 1 cup half-and-half
  • 1/4 teaspoon freshly grated nutmeg
  • 2 cups diced cooked turkey
  • 2 cups cooked noodles
  • 2/3 cups grated Romano cheese
  • 1/4 cup fresh parsley, chopped
 
Method

In a large stockpot, cook cauliflower in broth till tender. Cool slightly. Process in batches in blender, food processor, or use immersion blender till smooth. Return to stockpot. Stir in cream. Add turkey and noodles. Gently warm through, being careful not to boil. Remove from heat and stir in cheese. Garnish with parsley.

 

Notes: This is a perfect way to use up those holiday leftovers in a tasty nutritious way.
