Sherry's Best Clam Chowder

A delicious and creamy clam chowder to warm you on chilly nights.

Ingredients:

½ lb Bacon, chopped.
6 Tbsp Butter
2 cups Chopped Onion.
1 cup Chopped Celery.
2 tsp Minced Garlic.
½ tsp Salt.
1 tsp White Pepper.
½ cup Flour.
2 ( 10 Oz Cans Baby Clams, drained, juices reserved.
4 cups Water.
4 Red Potatoes, unpeeled, diced.
1 Pinch Nutmeg.
2 tsp Worcestershire Sauce.
¼ tsp Tabasco Sauce.
2 cups Light Cream.
1 tsp Dried Thyme.
1 Tbsp Fresh, chopped chives.

Directions:

Spray a lg pot w/ cooking spray. Cook bacon in pot, until crisp. Remove bacon. Melt butter in pot. Saute onions, celery, and garlic in butter over med-high heat, until softened; add salt and pepper. Add flour, cook for 2 min, stirring often. Add clam juice and water; bring to a simmer and simmer 15 min. Add potatoes, nutmeg, worcestershire sauce, and tabasco sauce. Simmer 15 min. Add cream, clams, and thyme; bring to a boil. Heat for 10 min. Add chives and bacon.
