Serendipity Chili

This chili is spiced with two varieties of ground chilies and cumin. Add as much spice and sugar to make it to your taste.
 

Ingredients

  • 3 lbs. ground beef
  • 1 - large onion, chopped
  • 3 T. ground New Mexico red chili
  • 1 T. ground Ancho chili
  • 1 t. ground Cumin
  • 3 medium cloves garlic, put through a garlic press.
  • 3/4 T. salt
  • 1 - 14 1/2oz can peeled whole tomatoes
  • 2 - 16oz cans red kidney beans with liquid
  • 1-2 T. sugar

Method

In a Dutch oven or other large heavy pot cook beef and onion over medium heat until meat is not longer pink; drain off fat. Stir in New Mexico red chili, and the Ancho chili along with the cumin, garlic and salt. Stir in the tomatoes, kidney beans and sugar. Bring to a boil, then lower the heat and simmer, covered, for at least 2-3 hours. Stir occasionally.

 

Notes: You can easily adjust the seasonings if you want it hotter. Add more sugar if you want that sweet/hot bite. I have made this chili the night before and cooked it in my crock-pot while at work on low for 7-8 hours instead of the 2-3 hours on the stove top. It's just as delicious.
