
Vegetable juice is heated with dried chives and a little butter then ladled over slices of Italian bread in soup bowls and sprinkled with Parmesan.
In medium soup pot heat vegetable juice with chives and butter until just bubbling. Place a slice of bread in 4 soup bowls. Ladle hot vegetable broth over bread in each cup. Bread will soften. Sprinkle 1 tbsp cheese on each serving. Serve immediately.
Notes:
Bread will get creamier as you eat soup. If not a fan of spicy, use regular vegetable juice. Serve with a side of salad.
