Sassy Clam Chowder

Canned clams, diced potatoes, light cream & seasoning sauce are combined in a crock pot for this chowder, which is thickened with arrowroot powder.
 

Ingredients

  • 6 oz can chopped clams in clam juice
  • 4 red potatoes
  • 1/2 medium yellow onion
  • 1/2 quart (2 cups) half-and-half or light cream
  • 4 Tbsp arrowroot powder
  • 1 1/2 oz. Nature's Own Original Seasoning Sauce

Method

Dice potatoes and cook in water until nearly tender; drain and set aside. While potatoes are cooking, lightly sautee chopped onion in 2 Tbsp cooking oil. Pour cream in a medium saucepan and heat to a gentle boil, stirring often. Combine about HALF of the cream, all of the Potatoes, the sauteed Onions, Clams with clam juice, and Seasoning Sauce in a crock-pot & place on high heat setting. Pour remaining cream into blender. Cover and carefully place on low speed. Slowly add arrowroot powder to blender, blending to prevent clumping. Add Arrowroot mixture to crock-pot and, stirring regulary, continue cooking on high heat about 30 minutes. Reduce heat to low, and continue cooking soup about 3 hours.

 

Notes: Serve soup in soup bowls or hollowed-out round sourdough bread bowls. Nature's Own sauces are avalable throughout Western Oregon or on-line.
