Roasted Red Pepper and Shrimp Bisque


A mixture of veggies, seasonings, broth & wine is combined with cream cheese & whipping cream, blended, and heated with cooked shrimp.



Ingredients:

  • 3 stalks celery, sliced thin
  • 2 large carrots, peeled and sliced thin
  • 1 medium onion, peeled and diced
  • 1 4-oz jar roasted red peppers
  • 1 clove garlic, minced
  • 1/4 tsp tarragon
  • 1/4 tsp dill weed
  • 1/4 tsp onion powder
  • 1/4 tsp Old Bay seasoning
  • 1/8 tsp curry powder
  • 1/8 tsp chili powder
  • Salt, pepper, and hot pepper sauce, to taste
  • 1 14 oz can chicken broth
  • 3 tbsp red cooking wine or 2 tbsp dry sherry
  • 4 oz of cream cheese, cut up
  • 3/4 cup whipping cream
  • 1 lb peeled & deveined cooked shrimp
  • Sour cream or garlic croutons

Method

Combine vegetables, seasonings, broth and wine in a 3-quart saucepan. Cook on high heat until broth just begins to boil. Reduce heat to medium-low, cover and cook until vegetables are tender. Add cream cheese and whipping cream. Bring to a boil, stirring occasionally. Reduce heat to medium-low. Using a blender or food processor, puree mixture until smooth. Add shrimp and simmer until heated through. Serve in soup bowls topped with a dollop of sour cream or garlic croutons.

Notes: Prep. Time is about 20 minutes, and total cooking time is about an hour.

Number of servings: makes 9 cups soup
