Roasted Red Pepper and Shrimp Bisque

A mixture of veggies, seasonings, broth & wine is combined with cream cheese & whipping cream, blended, and heated with cooked shrimp.
Ingredients
- 3 stalks celery, sliced thin
- 2 large carrots, peeled and sliced thin
- 1 medium onion, peeled and diced
- 1 4-oz jar roasted red peppers
- 1 clove garlic, minced
- 1/4 tsp tarragon
- 1/4 tsp dill weed
- 1/4 tsp onion powder
- 1/4 tsp Old Bay seasoning
- 1/8 tsp curry powder
- 1/8 tsp chili powder
- Salt, pepper, and hot pepper sauce, to taste
- 1 14 oz can chicken broth
- 3 tbsp red cooking wine or 2 tbsp dry sherry
- 4 oz of cream cheese, cut up
- 3/4 cup whipping cream
- 1 lb peeled & deveined cooked shrimp
- Sour cream or garlic croutons

Method
Combine vegetables, seasonings, broth and wine in a 3-quart saucepan. Cook on high heat until broth just begins to boil. Reduce heat to medium-low, cover and cook until vegetables are tender. Add cream cheese and whipping cream. Bring to a boil, stirring occasionally. Reduce heat to medium-low. Using a blender or food processor, puree mixture until smooth. Add shrimp and simmer until heated through. Serve in soup bowls topped with a dollop of sour cream or garlic croutons.
Notes: Prep. Time is about 20 minutes, and total cooking time is about an hour.
Number of Servings: makes 9 cups soup
