Rainy Day Soup

A healthy blend of stew meat, vegetables and noodles--perfect for a cold or rainy day.
 

Ingredients

  • 2 1/2 qts water
  • 2 lb stew meat
  • 2 cups sliced carrots
  • 2 medium onions
  • 2 cups shredded cabbage
  • 1/2 tsp salt
  • 1 qt new potatoes
  • 1/4 tsp pepper
  • 2 tbsp chopped parsley
  • 2 tsp cooking oil
  • 1 14.5 oz can stewed tomatoes
  • 1 clove garlic, minced
  • 1/4 tsp oregano
  • 2 stalks celery
  • 1 14.5 oz can whole kernel corn
  • Egg noodles

Method

Place water in a stock pot. Add stew meat, 1 quartered onion, salt and pepper. Bring to a boil and simmer 2 hours. Remove meat, dice, and return to stock pot. Add water to bring liquid to 2 1/2 quarts. In a separate skillet, add oil and cook sliced onion and garlic for 10 minutes over medium heat. Add contents of skillet to stock pot with carrots, cabbage, potatoes, parley, tomatoes, celery and oregano then simmer 1 1/2 hours. Add noodles and corn; simmer an additional 15 minutes.
