Rah Rah Green Chile Stew

This stew is green from the green chilies that are added for flavor and heat. Pork and potatoes add to the heartiness of this dish.
 

Ingredients

  • 1-1/4 pound pork tenderloin, fat trimmed
  • 1/4 cup Masa Harina
  • 1/4 cup canola or olive oil, divided
  • 4 garlic cloves, minced
  • 1 (14-ounce) can beef broth, plus
  • 1/2 cup water
  • 1 (12-ounce) bottle dark beer (use a brown ale, not a bitter stout)
  • 8 ounces diced green chilies, drained, or 1 cup medium-hot green salsa
  • 1 teaspoon chili powder
  • 1 teaspoon dried marjoram
  • 3 medium Yukon gold potatoes, cubed (about 3 Cups)
  • 1 bunch green onions, green tops sliced into
  • 1/4-inch pieces
  • 1 (14-1/2-ounce) can golden or white hominy, drained
  • 1/2 cup chopped cilantro

Method

Toss pork cubes to coat with Masa Harina. In large Dutch oven, brown pork cubes, in two separate batches, in 1/8 cup of oil each. Using slotted spoon, remove meat from pot. Add garlic to pot and cook 1 minute. Add broth, beer, chilies or salsa, chili powder and marjoram. Return meat to pot. Bring to boil and reduce heat. Cover and simmer 1 hour, or until meat is nearly tender. Add potatoes and green onions, simmer about 30 minutes more, or until meat and potatoes are tender. Add hominy and cilantro and heat through.
