Quick Veggie Soup


This simple soup combines vegetable juice with fat-free plain yogurt and some crushed red pepper flakes.



Ingredients:

  • 3 cups vegetable juice
  • 1 cup plain nonfat yogurt
  • Red pepper flakes (to taste)
  • Snipped chives (optional)

Method

Mix juice, yogurt and pepper flakes thoroughly together in a microwavable container. Heat through, stirring once, but do not boil. Pour into four mugs and sprinkle with chives, if desired.

Notes: This is a nutritious, nonfat breakfast on the run or a delightful start to a leisurely brunch.
