Quick Kielbasa Soup

This quick and easy soup uses Polish smoked sausage with canned vegetables and their liquid, plus potatoes, carrots and onion.
 

Ingredients

  • 1 lb. Kielbasa, sliced
  • 1 Can Whole Kernel Corn with liquid
  • 1 Can Pinto Beans with liquid
  • 1 Can Diced Tomatoes with liquid
  • 1 Large Potato, chopped
  • 2 Carrots, chopped
  • 1 Med. Onion, diced
  • 2 Garlic Cloves, chopped or minced
  • 1/2 Cup of Chicken Broth
  • Salt and pepper, to taste
 
Method

Combine all the ingredients in a large pan; do not drain canned vegetables. Bring to a boil, then reduce heat and simmer about 20 minutes or until potatoes and carrots are tender. Add Salt & Pepper to taste.

 

Notes: This is very easy to throw together, but still delicious! My husband and I like to have it for dinner with a salad & fresh bread.
