Potato and Ham Chowder

This homemade soup has just the right amount of potatoes, corn, onion and ham. Using whole milk really adds to the creaminess of this meal.
Ingredients
- 2 tbsp margarine
- 1 lb red potatoes, cut into 1/2 inch chunks
- 1 cup chopped onion
- 1/2 cup sliced celery
- 5 cups skim milk
- 3 tbsp flour
- 8 oz small ham chunks
- 1 cup corn kernels
- Salt and pepper to taste

Method
Melt margarine in a Dutch oven. Stir in potatoes, onions and celery and cook until almost soft. Stir flour into 1/2 cup milk then add to potato mixture. Add remaining milk and ham. Simmer, covered, 5 minutes then add corn, salt and pepper. Simmer until thickened and vegetables are tender.
Notes: Whole milk may be substituted for skim milk.
