Porky Pear Soup

Pieces of pork butt are cooked in broth with vegetables and seasonings, then combined with pear chunks and hoisin sauce to make this soup.
 

Ingredients

  • 1 tbsp olive or canola oil
  • 1/4 pound prosciutto, chopped
  • 1 carrot, chopped
  • 1 stalk of celery, chopped
  • 1 onion, chopped
  • 1 tsp grated fresh ginger
  • 1/2 fennel bulb, chopped (about 1 cup)
  • 3 roasted garlic bulbs, mashed
  • 1 bay leaf
  • 1/2 teaspoon fresh chopped rosemary
  • 1/2 tsp dried rubbed sage
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 1/2 to 2 lb pork butt, cut up
  • 2 quarts homemade chicken broth or lower-sodium canned broth
  • 2 tbsp hoisin sauce
  • 4 or 5 pears, peeled, cored and cut into bite size chunks
  • Grated Asiago or parmesan cheese

Method

Heat oil in 4-5 qt saucepan or Dutch oven. Add prosciutto and cook until lightly browned, about two minutes. Add carrots, celery, onion, ginger and fennel. Sweat vegetables on medium-low heat for five minutes. Stir in mashed garlic, bay leaf, rosemary, sage, salt & pepper. Add pork pieces and allow to brown with vegetables about five minutes. Pour in stock and simmer, covered, about three hours. When pork is very tender, pull meat off bone and return to pot. Discard bone and fat. Add pears and hoisin. Simmer until pears are tender but not mushy, about 15 minutes. Serve in low, wide soup bowls, topped with grated cheese.

 

Notes: My husband is diabetic and I must watch my weight. I am always looking for great ideas for nutritious soups we can come home to. This is also great in a crock pot.
