Pork and Posole Stew

The hominy in this pork stew adds a chewy texture. Chili powder, cumin, and chipotle add flavor and spiciness.
 

Ingredients

  • 1 tablespoon corn oil
  • 2 pounds pork loin, cut into cubes
  • 1 cup diced yellow onion
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 15-oz cans yellow hominy, rinsed and drained
  • 3 cups chicken broth
  • 2 tablespoons chipolte chili peppers in adobo sauce, minced
  • 2 tablespoons lime juice
  • 1/3 cup snipped fresh cilantro

Method

In large deep skillet, heat oil over medium-high heat. Add pork, onion, chili powder, cumin, salt, and pepper. Brown pork on all sides. Add hominy, broth, and chipotle. Bring to boiling; reduce heat. Cover and simmer 20 minutes. Stir in lime juice. Garnish with cilantro.

 

Notes: This spicy flavorful stew is great served along with corn bread.
