Polish Winter Soup


A healthy vegetable soup in a tomato flavored broth. This one will warm up the coldest winter evening.



Ingredients:

  • 6 cups water
  • 1 6 oz can tomato paste with basil, garlic and oregano
  • 6 carrots, diced
  • 2 medium sized stalks celery, coarsely chopped
  • 1 large onion, coarsely chopped
  • 2 large garlic cloves, coarsely chopped
  • 4 cups cabbage, diced
  • 2 tablespoons extra virgin olive oil
  • 1 can corn, drained
  • 2 cups frozen sweet peas
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon pepper, or to taste
  • 1 tbsp tarragon, dry leaves
  • 1/2 tbsp basil, dry leaves
  • 1/4 tbsp Italian seasoning  
  • 1/4 oregano powder
  • Optional: two large potatoes (peeled and cut into 1/2 inch cubes), 2 cups water and two cups half and half

Method

Heat oil in a large skillet over moderate heat. Add onion, garlic and saute stirring occasionally until onions are light brown. Add carrots and celery, saute occasionally until soft then add spices. In large sauce pan combine water, tomato paste and bring to a boil. Add sauted onion, garlic, carrots and celery. Adjust heat so mixture simmers gently, add cabbage, peas, corn,(and if desired potatoes) cover, and cook for 15-20 minutes. If you using potatoes and half and half, after 15 minutes add half and half and simmer soup for another 5 minutes.
