Peanutty Pumpkiny Soup

A healthy soup your kids will love--deceptively healthy and so easy to make.
 

Ingredients

  • 1 can pumpkin puree
  • 2 cups peanut butter
  • 4 cups chicken or vegetable broth
  • 1/2 cup pumpkin seeds
  • 1 tbsp butter
  • 1/2 cup grated sharp cheddar cheese
  • Sea salt
 
Method

Place large saucepan over medium heat. Add pumpkin, peanut butter and broth. Whisk vigorously, and heat 15 minutes, stirring occasionally. Meanwhile, place small saute pan over medium heat, melt butter then stir pumpkin seeds until slightly toasted, 5 minutes. Serve in warmed mugs with a scoop of pumpkin seeds and cheese, and a sprinkle of sea salt. Great with crusty bread for dipping.

 

Notes: Every kid I've met so far loves this soup, and its great because I always have the ingredients on hand. We love to serve it as a chili alternate when family gathers to watch a football game. Easy to double or even triple, and you can cook it in a crock-pot for 2-6 hours if you'd prefer.
