Peach Gazpacho

A fresh tomato gazpacho with a twist--diced peaches and basil add a unique burst of flavor.
Ingredients
- 2 tomatoes
- 1 peach, small dice
- 1 tbsp apple cider vinegar
- Salt to taste
- Basil, chopped, to taste

Method
In a food processor, combine tomato, apple cider vinegar and salt. Add water, if necessary to reach the desired thickness of soup. Add peach and basil just before serving.
Notes: Peach in gazpacho? Surprisingly wonderful combination.
