Pam's Chicken Chili

This chicken chili is packed with three kinds of black beans, roasted garlic infused tomatoes and plenty of chicken. Great for fall and football games.
 

Ingredients

  • 6 boneless chicken breasts with rib meat
  • 3 cans southwestern black beans with cumin and chili spices
  • 1 can jalapeno black beans with lime juice
  • 4 cans southwestern refried black beans with lime juice
  • 6 cans (14.5 oz) diced tomatoes with roasted garlic
  • 2 large cans (8 oz) tomato sauce with roasted garlic
  • 1/4 cup corn flour
  • Optional toppings:
  • Sour cream
  • Cheddar cheese
  • Optional:
  • 1-2 packages refrigerated cornmeal biscuits
  • Aluminum foil

Method

Boil chicken until done and shred. Add all canned ingredients to a large stock pot, add chicken and simmer until heated through. Add corn flour as needed to thicken. For cornbread bowls, make foil into balls the size of tennis balls. Spray with cooking spray to prevent sticking, stretch biscuits over foil and bake on a cookie sheet until golden brown.
