New England Hot Leek and Cucumber Soup


This creamy leek and onion soup would make a great appetizer for your next dinner party.



Ingredients:

  • 2/3 cup sliced leeks
  • 4 cups diced, unpeeled cucumbers
  • 1 cup fined diced uncooked potatoes
  • 1/4 cup fresh chopped parsley
  • 4 cups chicken broth
  • 1 tsp salt, add more to taste
  • 1/4 tsp powdered mustard
  • 1/4 tsp savory leaves
  • 1/4 tsp ground white pepper
  • 2/3 cup heavy cream

Method

Wash leeks well and slice. Place in a saucepan with next 7 ingredients. Cover and cook until tender. Strain through a sieve, being sure to push as much of the vegetable through as possible. Reheat. Just before serving, add white pepper and cream. Serve hot.

Notes: Garnish with dried chives and a pinch of nutmeg. For those of us who live in New England, this soup is the final by-product of our own fresh victory garden vegtables until next year.
