New Orleans Fish Soup

This soup cooks tomato, tomato paste, green sweet pepper, sweet potato, diced cod, rice and flour together in a mixture of fish stock, soy sauce, olive oil and water.
 

Ingredients

  • 1/2 cup flour
  • 1 diced tomato
  • 1 diced green bell pepper
  • 3 cups fish stock
  • 2 tbsp soy sauce
  • pot of water
  • 3/4 cup vegetable oil
  • 3 tbsp tomato paste
  • 1 diced sweet potato
  • 1 lb diced cod or redfish
  • 1 cup rice

Method

Simmer everything in a pot for 35 minutes, stirring once in a while.

 

Notes: To be authentic, use crawfish stock instead of fish stock, and use diced crawfish instead of regular fish, or a combination of diced redfish and diced crawfish. For a spicier taste, add 1 tsp. cayenne pepper.
