A wonderful vegetable soup with potatoes, beans, onions, and spinach with a little Italian flavors that is slow cooked in the crockpot.



Ingredients:

  • 1 c. dried white beans  
  • 2 c. yellow onion, chopped  
  • 1 c. celery, chopped coarsely  
  • 4 c. cubed potatoes  
  • 2 tsp. finely chopped garlic  
  • 2 c. water or chicken stock  
  • 1/3 c. olive oil  
  • salt and pepper to taste  
  • 1/2 lb. leaf spinach, chopped  
  • 1 pint canned tomatoes  
  • Parmesean cheese  
  • Italian or French Bread, sliced  

Method

Wash and sort beans. Put in crockpot with enough water to cover 1 inch above beans. Cook on low 8 hours, or until tender. Add onions, celery, potatoes, garlic, oil, seasonings, tomatoes. Add enough water or stock to cover 1-2 inches above vegetables. Less liquid makes a thicker soup. Cook uncovered until veggies are crisp-tender. Remove from heat. Add spinach, stir until it is wilted.. To serve, put 1 slice bread in soup bowl, add soup, and sprinkle with Parmesean cheese. GOOD****
